Pancit is a Chinese dish made with noodles and is one of the most popular dishes in the Phillipines. It has been served at every celebration I have ever been to.
Any kind of meat or sea- food can be used as the base for pancit canton: pork, beef, shrimp, milk fish etc.
This is a basic Filipino recipe for pancit canton.
Tips for Success:
- make sure you cook the meat well
- before putting the noodles into the broth, take out half of the solid cooked ingredients. These will go back into the pot at the end of the cooking
- do not overcook the vegetables – carrots, celery, cabbage
- make sure the broth is boiling before putting in the noodles
- toasted garlic can be used as a garnish
- chopped hard boiled eggs can be used as a garnish
Ingredients for Pancit Canton with chicken
- 1 large chicken breast
- 2 chicken stock cubes
- 1 cabbage shredded
- 4 good sized carrots (cut into thin strips)
- 2 celery sticks (cut into thin slices)
- 1/2 meduim size onion (sliced)
- 2 cloves garlic (crushed)
- 1 kgm yellow noodles
- 3 tablespoons vegetable oil
- 2 calimansi (or lemons)
- 2 green onions chopped
Extras: Salt, pepper & soy sauce
Method
1. Place checken breast in cooking pot and cover with water
2. Boil for 20 minutes and allow to cool
3. Remove and discard the chicken skin. Shred chicken meat into strips
4. Save the chicken broth for later
5. Place vegetable oil in large wok
6. Add garlic, onions and chicken strips
7. Stir together and cook until onions become transparent
8. Add carrots
9. One minute later add celery
10 One minute later add cabbage
11. dissolve chicken stock cubes in the chicken broth
12. When vegetables are cooked but still crispy remove half solid ingredients
13. add 1 cup chicken broth
14. bring to boil and add noodles
15. cover for one minute
16. replace the cooked vegatables
17. stir until well mixed
18. add extra broth of mix is too dry
19. add salt, pepper, soy sauce to taste
20. when noodles are soft transfer to serving dish
21. garnish with chopped green onion
22. serve with wedges of calimansi or lemons
